Kick back. It’s Summer. If a refreshingly cool margarita glistening in the sun with a salty rim is your traditional diversion, may we recommend utilizing the season’s gorgeous gift of sweet watermelon to your margarita mixers. If you’ll be spending time outside with friends, whip up a pitcher of these watermelon margaritas to share. Friends not around? Whip up a pitcher anyway and treat yourself.
Cut the watermelon into manageable wedges. Scoop the flesh into the blender. Puree until smooth. You should get about 5 cups. Working slowly, pour through a fine-mesh strainer into a wide-mouth 9-cup pitcher, pushing on the solids. (If your pitcher opening isn’t wide enough, put the strainer over a bowl.) You should get about 4 cups of strained puree. Stir in the tequila, orange liqueur, and lime juice.
Rub 8 (8-ounce) glasses with a lime wedge. Put some salt on a small plate. Rim each glass in the salt. Fill the glasses about halfway with ice. Pour in the margarita. Skewer each jalapeño with a slice of salame and serve with the drink.
